Its balanced ratio of rice and soy koji (50-50) makes it an ingredient of choice for miso soups and broths, as well as marinades: it will give meat a tender and juicy texture, as well as a rich, well-rounded flavor. It can also be used in salad dressings, sauces, or condiments, for example, mixed with mayonnaise to create a dip for your vegetables.
