This gentle, slightly sweet soy sauce combines the sweetness of mirin with the umami of shiitake mushrooms. The result is a smooth, well-rounded sauce that envelops the ingredients.
It was created especially for Tamago Kake Gohan, the traditional Japanese breakfast consisting of a raw egg placed on very hot rice, but it can also be used with omelets (tamagoyaki), fried eggs, soft- or hard-boiled eggs. It also seasons many other dishes, such as stir-fries, stews, hot pots, and soups. We love drizzling it over silken tofu.
