Soy cream, also known as oboro tofu, is characterized by a delicate, velvety texture that melts in your mouth. This tofu is made from soy milk coagulated with nigari, a natural magnesium chloride derived from seawater. Its fine texture and mild flavor make it a versatile ingredient suitable for many dishes. In savory cooking, it thickens sauces and soups, adds creaminess to stews, and blends perfectly into traditional miso soup. For sweet dishes, it replaces cream to make light desserts such as custards, mousses, cheesecakes, or vegan puddings.
