Located in southern Japan, Okinawa boasts a unique history and a subtropical climate conducive to the cultivation of exotic ingredients. The archipelago, famous for its long life expectancy and varied cultural influences, offers a gastronomy both traditional and original, shaped by centuries of exchanges with China, the USA and other regions of Japan.

Okinawa's flagship products include goya (bitter melone), used in emblematic dishes such as goya champuru, a stir-fry of vegetables, tofu and meat, and Okinawa miso, slightly different from traditional miso due to its milder taste. The prefecture is also renowned for its awamori, a unique spirit made from distilled rice - a local specialty not to be missed.

Among other delicacies, the archipelago produces traditional sweets such as kokuto (cane sugar), as well as seaweed and tropical fruit products, which add an exotic touch to Japanese cuisine.
