Produites au Japon par Shinshu Togakushi Soba, une entreprise familiale spécialisée dans la fabrication de nouilles depuis l’après-guerre, elles sont réalisées dans la région de Nagano, qui est réputée pour la qualité de son sarrasin.
Pour 1 personne : plongez 100g de soba dans 1L d'eau bouillante. Faites cuire 5min30 en remuant doucement. Egouttez et rincez les à l'eau froide. Dégustez froid, façon ""zaru"", avec de la sauce tsuyu ou chaud dans un bouillon, avec les accompagnements de votre choix (tempura, ciboulette, radis blanc daikon, volaille grillée, du wasabi, de l'algue nori en lamelles,...).
Adaptez le temps de cuisson et la fermeté des nouilles à votre goût.
