Kuromatsu Senjo

A brewery located in the Ina Valley in Nagano Prefecture, surrounded by the Southern and Central Alps. Founded in 1866, it uses pure spring water from the Alps to brew its sake. The brewery specializes in using high-quality locally grown rice, particularly "Hitogokochi," a variety that plays a crucial role in sake production. The company prides itself on combining tradition and innovation, incorporating modern techniques while preserving the ancestral craftsmanship of sake brewing. Their philosophy is rooted in promoting fermented rice and soybean-based foods to enrich Japanese culinary culture.
