Rice, kôji rice ferment
Keep away from light, in a dry, temperate place.
Senjo Brewery is located in Nagano prefecture, a region known for its high altitude and ideal climate for agriculture, particularly rice production. Founded in 1866 by Matsujiro Kurokouchi in Ina City, the brewery has over 150 years of history. Inspired by Japan's serene landscapes and age-old brewing techniques, Senjo stands out for its commitment to exceptional quality, using only the finest local ingredients, carefully selected as their motto states "Delicious sake is an art, while sake making is a science". Senjo makes a point of respecting traditional production techniques handed down from generation to generation. Each stage of production, from rice polishing to fermentation, is carried out with the precision and expertise that guarantee a top-quality product. Some Senjo sakes and spirits are aged in wooden casks to develop more complex aromas and flavors. The choice of wood is crucial, as it directly influences the aromatic profile of the sake or spirit.
