Brewery located in the Ina Valley, Nagano Prefecture, surrounded by the Southern and Central Alps. Founded in 1866, it uses pure spring water from the Alps to make its sake. The brewery specializes in the use of quality locally-grown rice, in particular "Hitogokochi", a rice that plays a crucial role in sake production. The company makes a point of combining tradition and innovation, integrating modern techniques while preserving ancestral brewing know-how. Their philosophy is based on the enhancement of rice- and soy-based fermented cultures to enrich Japanese gastronomic culture.
