A traditional hon mirin with a mellow and slightly sweet flavor. It is made from glutinous rice, koji rice, and shochu. Its natural fermentation gives it an alcohol content of less than 15%, equivalent to that of sake. The consumption of mirin dates back to the Sengoku period, known as the "warring states period," from the end of the 15th century, when it was consumed as an alcoholic beverage. It was not until the Edo period in the 17th century that its contemporary use as a culinary seasoning began to spread. An essential ingredient in Japanese cuisine, mirin adds a shiny, caramelized aspect to dishes. It is commonly used in simmered dishes or stir-fries such as yakisoba, but also to balance the high saltiness of soy sauce. Its natural sweetness, resulting from fermentation, gives it a delicate and refined taste that is used to make marinades or teriyaki sauces.
