One of the most famous Japanese sugars and the unrefined black sugar in Okinawa. It is made from pressed sugar cane juice, similarly to muscovado sugar. However, it has distinct characteristics due to the specific variety of sugar cane used and local production methods. The process of making Okinawa black sugar involves cooking sugar cane juice over low heat for an extended period. This allows the sugar to take a darker shade and develop rich flavors of molasses and caramel. The dark color and the intense flavor distinguish black Okinawa sugar from more conventional sugars.
