Okinawa black granulated sugar, made from sugar cane grown exclusively in Okinawa and on the island of Kikai, in Kagoshima. Produced by the Shinryo company in Uruma, it is prepared using the traditional raw sugar manufacturing method, kokuto, which involves removing impurities from the sugarcane juice, before concentrating and cooling it without the addition of chemicals. The result is a pure, natural sugar, rich in essential minerals such as calcium, potassium and iron, with a sweet yet powerful taste.
Thanks to its ideal texture and fine granulometry, this sugar dissolves perfectly in hot drinks, such as tea, and adds a sweet touch to pastries and confectionery. Its deep taste and rich color come from the addition of black sugar from Yonaguni, an island in Okinawa, which intensifies the flavor and adds a darker nuance. This sugar is particularly appreciated for its ability to add a savory, caramelized note to desserts, while offering a pleasing visual experience with its marbling in pastries.

Kota Shoten, founded in 1948 in Hitachinaka, Ibaraki prefecture, is a Japanese company specializing in the processing and distribution of agricultural products such as kinako (roasted soy powder), potato starch, beans and pickles. Specializing in natural food products, the company sources from local producers, guaranteeing the freshness and quality of its products.

Among their flagship products is kinako, a lightly sweetened roasted soy powder, rich in vegetable protein and fiber. It is used in a variety of culinary preparations, including traditional Japanese desserts such as dango (glutinous rice dumplings) and mochi (glutinous rice cakes). Kota Shoten's kinako is made from non-genetically modified soybeans from Hokkaido, offering authentic flavor and a light texture.
