Recipe for spicy Japanese mayonnaise

Ingredients

  • 1 egg yolk
  • 1 tablespoon rice vinegar
  • 150 ml neutral oil
  • 1 to 2 teaspoons of karashi mustard paste (depending on desired intensity)
  • 1 tsp. sugar
  • Salt, to taste
  • A few drops of lemon juice (optional)

Directions

  1. In a bowl, mix the egg yolk, rice vinegar, and sugar until you obtain a smooth base.
  2. Gradually add the oil, whisking vigorously until the mayonnaise thickens.
  3. Add the karashi paste a little at a time, then season with salt and mix thoroughly.
