Recipe for spicy Japanese mayonnaise
This version of Japanese spicy mayonnaise features karashi, a Japanese mustard with a sharp, clean heat. Ingredients
- 1 egg yolk
- 1 tablespoon rice vinegar
- 150 ml neutral oil
- 1 to 2 teaspoons of karashi mustard paste (depending on desired intensity)
- 1 tsp. sugar
- Salt, to taste
- A few drops of lemon juice (optional)
Directions
- In a bowl, mix the egg yolk, rice vinegar, and sugar until you obtain a smooth base.
- Gradually add the oil, whisking vigorously until the mayonnaise thickens.
- Add the karashi paste a little at a time, then season with salt and mix thoroughly.
