This version of Japanese spicy mayonnaise features karashi, a Japanese mustard with a sharp, clean heat. More pungent than Western mustard, it brings a bold heat that rises quickly without masking other flavors. Combined with a creamy, slightly tangy mayonnaise base, it creates a balanced sauce that is powerful yet elegant, perfectly suited to fried foods and Japanese bowls.

- In a bowl, mix the egg yolk, rice vinegar, and sugar until you obtain a smooth base.
- Gradually add the oil, whisking vigorously until the mayonnaise thickens.
- Add the karashi paste a little at a time, then season with salt and mix thoroughly.
- Adjust the acidity with a few drops of lemon juice if necessary. Taste and adjust the seasoning.
Recipe notes
This spicy karashi mayonnaise is the perfect accompaniment to tonkatsu, karaage, okonomiyaki, ramen, Japanese sandwiches, salmon, or fried vegetables.
It can be stored in the refrigerator in an airtight container for up to 48 hours.
Add ½ teaspoon of white miso to round out the spiciness.
Add a few drops of toasted sesame oil for a roasted flavor.
For a more gradual spiciness, mix the karashi with a teaspoon of mayonnaise before adding it to the mixture.
