An enoki mushroom condiment with a sweet, umami and slightly piquant taste. Made with enoki mushrooms harvested the morning they are prepared in Nagano, in the Shinshu region, reputed to be the cradle of Japanese mushrooms, this variety is distinguished by its creamy color and delicate texture.
The mushrooms are marinated in a traditional seasoning sauce based on soy sauce and mirin, with a hint of togarashi pepper. With no additives, this condiment is ideal on a bowl of rice, or to enhance hot dishes such as nabe or ramen.
