A mild, umami-rich enoki mushroom condiment. It is made with a wild variety of enoki mushrooms characterized by their light brown color, firmer texture, and more aromatic, umami-rich flavor than standard enoki mushrooms. The mushrooms are harvested in the Nagano region, in the heart of Shinshu, an area renowned as the birthplace of Japanese mushrooms. The mushrooms are harvested the morning they are prepared and then seasoned with a handmade sauce that has a mild, balanced, and umami flavor, made primarily from soy sauce, mirin, vinegar, and kombu seaweed. Highly versatile, this condiment is ideal for enhancing classic Japanese dishes. It can be enjoyed on its own over a bowl of hot rice, vegetables, or tofu, but also to enhance hot dishes, stews, and broths such as nabe or ramen.
