An enoki mushroom condiment with a mild, umami taste. It's made with a wild variety of enoki mushrooms characterized by their light brown color, firmer texture and more aromatic, umami taste than classic enoki mushrooms. The mushrooms are harvested in the Nagano region, in the heart of Shinshu, a region renowned as the cradle of Japanese mushrooms. The mushrooms are harvested the morning they are to be prepared, and then dressed with a mild, balanced and umami-tasting homemade sauce made from soy sauce, mirin, vinegar and kombu seaweed. This versatile condiment is ideal for enhancing classic Japanese dishes. It can be enjoyed on its own, over a bowl of hot rice, vegetables or tofu, or to enhance hot, simmered dishes and broths such as nabe or ramen.
