7-spice edamame recipe

Edamame are young soybeans still in their pods, generally harvested before maturity. Presented in their pods and sprinkled with salt, they are generally eaten as an aperitif or side dish.

Ingredients

  • 400 g edamame
  • 12 g garlic
  • 60 g sake
  • 20 g soy sauce
  • 20 g mirin
  • 2 g dashi powder
  • 6 g water
  • 8 g sesame oil
  • 4 g shichimi
  • salt

Directions

  1. Bring the water to the boil in a saucepan. Add the edamame to the boiling water. Leave to cook for 3 minutes.
  2. Wring out the edamame and rinse in cold water to retain the crunchiness.
  3. Put all the ingredients (except the edamame) in a saucepan and place over the heat.
  4. Add the edamame when the ingredients have reduced. Mix and season with a little salt.
