Teriyaki Tofu

Ingredients

  • 400 g firm or extra-firm tofu
  • 1 tbsp cornstarch
  • 1 tablespoon vegetable oil (sunflower or neutral sesame)
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 1 tbsp sake (optional but recommended)
  • 1 tbsp. sugar or honey
  • 1 tsp. grated ginger (optional)
  • 1/2 tsp grated garlic (optional)

Directions

  1. Press the tofu for 20 to 30 minutes to remove excess water.
  2. Cut into slices or cubes.
  3. Lightly dust with cornstarch to help them brown.
  4. Heat the oil in a skillet over medium heat.
  5. Brown the tofu for 3–4 minutes on each side until crispy.
  6. Mix all the ingredients in a bowl.
  7. Pour into the pan with the tofu.
  8. Let it reduce for 2–3 minutes until it reaches a syrupy consistency.
  9. Toss the tofu in the sauce to coat it thoroughly.
  10. The sauce should coat the food and have a glossy sheen.
