Teriyaki Tofu

Ingredients
- 400 g firm or extra-firm tofu
- 1 tbsp cornstarch
- 1 tablespoon vegetable oil (sunflower or neutral sesame)
- 3 tbsp soy sauce
- 3 tbsp mirin
- 1 tbsp sake (optional but recommended)
- 1 tbsp. sugar or honey
- 1 tsp. grated ginger (optional)
- 1/2 tsp grated garlic (optional)
Directions
- Press the tofu for 20 to 30 minutes to remove excess water.
- Cut into slices or cubes.
- Lightly dust with cornstarch to help them brown.
- Heat the oil in a skillet over medium heat.
- Brown the tofu for 3–4 minutes on each side until crispy.
- Mix all the ingredients in a bowl.
- Pour into the pan with the tofu.
- Let it reduce for 2–3 minutes until it reaches a syrupy consistency.
- Toss the tofu in the sauce to coat it thoroughly.
- The sauce should coat the food and have a glossy sheen.
