Situated on the shores of the Sea of Japan and bordered by snow-capped mountains, Niigata prefecture is renowned for the exceptional quality of its rice. Cultivated in fertile rice fields irrigated by pure mountain water, Niigata is also home to some of the country's finest sakes, made with ancestral know-how.

In addition to its exceptional rice, the region is famous for its tasty seafood, such as buri (seriole) or delicate nanban ebi shrimp, as well as for its noppe, a traditional vegetable and mushroom stew. Hegisoba noodles, with their unique texture thanks to the funori seaweed that binds them together, are another local specialty.
