Sardine sandwich

Ingredients
- 2 slices of shokupan-style white bread
- ½ ripe avocado
- 3 to 4 lettuce leaves
- 2 to 3 thin slices of cucumber
- A few shiso sprouts or sprouted seeds
- 1 can of sardines
- 3 tablespoons of mayonnaise
- The juice of ½ a lemon
- 1 teaspoon of wasabi powder
- 1 teaspoon of rice vinegar
- A few sprigs of chopped chives
- Salt and pepper
Directions
- Coarsely mash the sardines in a bowl.
- Add the mayonnaise, lemon juice, rice vinegar, wasabi, and chives.
- Mix until smooth, then season with salt and pepper to taste.
- Slice the avocado into thin slices.
- Slice the cucumber into thin strips and wash the lettuce leaves.
- Spread the sardine mixture generously on a slice of bread.
- Add the avocado slices, cucumber, lettuce, and sprouts.
- Top with the second slice of bread.
- Gently press the sandwich, then cut it in half.
