Thanks to its varied climate and rich soil, Gifu prefecture offers a wide variety of exceptional products, combining traditional craftsmanship with unique flavors.

The prefecture is renowned for its excellent sake. Thanks to the purity of its spring water and the quality of the rice grown locally, Gifu's breweries produce refined nihonshu with delicate, balanced aromas. Some of these breweries perpetuate centuries-old brewing techniques, offering vintages prized throughout the country.

Gifu is also home to one of the cradles of fermented miso, in particular red miso, which develops deep, umami flavours through prolonged fermentation. This condiment is essential to many Japanese recipes, adding an incomparable richness of flavor to dishes.

Another local specialty is Gero soba, buckwheat noodles made with pure spring water, which gives them a firm texture and subtle flavor. They are often served cold with a dipping sauce or hot in a light broth.
