Thanks to its varied climate and rich terroir, Gifu Prefecture offers a wide variety of exceptional products that combine traditional craftsmanship with unique flavors.

The prefecture is renowned for its excellent sake. Thanks to the purity of its spring water and the quality of locally grown rice, Gifu’s breweries produce refined nihonshu with delicate, balanced aromas. Some of these breweries continue to use centuries-old brewing techniques, producing sake that is prized throughout the country.

Gifu is also home to one of the birthplaces of fermented miso, particularly red miso, which develops deep, umami-rich flavors through extended fermentation. This condiment is essential to many Japanese recipes and adds an incomparable depth of flavor to dishes.

Another local specialty: Gero soba, buckwheat noodles made with pure spring water, which gives them a firm texture and subtle flavor. They are often served cold with a dipping sauce or hot in a light broth.
