Ingredients

  • 125 g flour
  • 1 tablespoon sifted matcha powder
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 egg
  • 150 ml milk
  • 20 g melted butter (+ a little more for cooking)
  • Optional: vanilla extract

Directions

  1. In a bowl, sift the flour and matcha, then add the sugar, baking powder, and salt.
  2. In another bowl, beat the egg with the milk and melted butter (and vanilla, if using).
  3. Pour the liquid ingredients into the dry ingredients and gently mix until you have a smooth batter. Don’t overmix to keep the pancakes fluffy.
  4. Heat a nonstick skillet over medium heat and add a little butter. Pour in a small ladleful of batter.
  5. When bubbles start to form on the surface, flip the pancake and cook for 1–2 minutes on the other side.
  6. Serve warm, plain or with maple syrup, berries, whipped cream, or a sprinkle of grated white chocolate.
