Matcha pancake recipe

Ingredients
- 125 g flour
- 1 tablespoon sifted matcha powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 1 egg
- 150 ml milk
- 20 g melted butter (+ a little more for cooking)
- Optional: vanilla extract
Directions
- In a bowl, sift the flour and matcha, then add the sugar, baking powder, and salt.
- In another bowl, beat the egg with the milk and melted butter (and vanilla, if using).
- Pour the liquid ingredients into the dry ingredients and gently mix until you have a smooth batter. Don’t overmix to keep the pancakes fluffy.
- Heat a nonstick skillet over medium heat and add a little butter. Pour in a small ladleful of batter.
- When bubbles start to form on the surface, flip the pancake and cook for 1–2 minutes on the other side.
- Serve warm, plain or with maple syrup, berries, whipped cream, or a sprinkle of grated white chocolate.
