Bukkake Udon Recipe
Bukkake udon is a simple and refreshing Japanese dish that’s very popular in Japan, especially in the summer. It consists of thick, chewy udon noodles topped with a light broth made from dashi, soy sauce, and mirin, then garnished to taste. Served cold or warm, it’s a quick, balanced dish bursting with umami.

Ingredients
- 2 servings of fresh or dried udon noodles
- 200 ml of dashi (cold or warm, depending on preference)
- 2 tbsp. soy sauce
- 1 teaspoon of sugar (optional)
- 1 teaspoon sesame oil
- 1 teaspoon of rice vinegar
- 1 teaspoon of grated ginger
- Raw egg or soft-boiled egg
- Sesame seeds

Directions
- Combine the soy sauce, sugar, rice vinegar, ginger, and sesame oil. Refrigerate or keep warm.
- Cook the udon noodles in a large pot of boiling water according to the package directions.
- Drain them, then rinse them thoroughly under cold water to remove excess starch and achieve a firm texture.
- (If you prefer them warm, reheat them briefly after rinsing.)
- Place the udon noodles in bowls. Pour the sauce directly over the noodles (bukkake means “to pour over”).
- Rehydrate the seaweeds
- Add your choice of toppings and serve immediately.
