Bukkake Udon Recipe

Bukkake udon is a simple and refreshing Japanese dish that’s very popular in Japan, especially in the summer. It consists of thick, chewy udon noodles topped with a light broth made from dashi, soy sauce, and mirin, then garnished to taste. Served cold or warm, it’s a quick, balanced dish bursting with umami.

Ingredients

  • 2 servings of fresh or dried udon noodles
  • 200 ml of dashi (cold or warm, depending on preference)
  • 2 tbsp. soy sauce
  • 1 teaspoon of sugar (optional)
  • 1 teaspoon sesame oil
  • 1 teaspoon of rice vinegar
  • 1 teaspoon of grated ginger
  • Raw egg or soft-boiled egg
  • Sesame seeds
  • seaweeds

Directions

  1. Combine the soy sauce, sugar, rice vinegar, ginger, and sesame oil. Refrigerate or keep warm.
  2. Cook the udon noodles in a large pot of boiling water according to the package directions.
  3. Drain them, then rinse them thoroughly under cold water to remove excess starch and achieve a firm texture.
  4. (If you prefer them warm, reheat them briefly after rinsing.)
  5. Place the udon noodles in bowls. Pour the sauce directly over the noodles (bukkake means “to pour over”).
  6. Rehydrate the seaweeds
  7. Add your choice of toppings and serve immediately.
