This miso is made from soybeans and Akita-Komachi rice. These two ingredients share the fact of being cultivated in the Akita region, north of Japan and to benefit from the groundwater in Hachimantai, in the prefecture of Iwate. The slow fermentation of this miso is done for several months and its high proportion of rice kôji (12% kôji against 10% soy bean) gives it a soft and deep taste, with a touch of acidity. It is perfect for soups, marinades and sauces or in dips for the aperitif.
His brewery, Asari Sasuke Shoten, founded in 1872, emphasizes the products from Akita.
