Naturally red, yuyake-mochi sticky rice is characterized by its high fiber content, tannins and antioxidants, higher than ordinary complete rice. It is also rich in minerals, notably in magnesium.
The Japanese often use it to prepare Sekihan, a rice -based dish and Azuki red bean. It is sometimes used as a rice in Saké because of its color.
The Japanese consume it mixed with white rice in a 1/3 ratio, where it brings taste, texture and rice colors. It can also be consumed in salad, sautéed rice or in desserts.
Black rice is cultivated in the prefecture of Toyama which is renowned for the quality of its rice. The plains are irrigated by the melting of the snow of Mount Hida, also called "Northern Alps". With its fertile and nutrient lands, the region is conducive to rice cultivation: it represents more than half of national rice production.
