Collection: Amazake
The Amazake is a Japanese, soft and thick fermented food, made from rice and koji. Its name literally means "sweet sake". The Amazake manufacturing process is similar to that of sake, but rather than letting fermentation continue until alcohol is formed, the Amazake is cooked before it happens. Amazake is often used as a natural sweetener for desserts because it is healthier and less caloric than refined sugar. It is also rich in B vitamins and acts beneficial on the intestinal flora and is gluten -free or lactose. In Japan, we taste this hot ancestral drink in winter and cool in summer, breakfast, snack or dessert.
