The process of making Okinawa black sugar involves cooking sugar cane juice over low heat for an extended period. This allows the sugar to take a darker shade and develop rich flavors of molasses and caramel. The dark color and the intense flavor distinguish black Okinawa sugar from more conventional sugars.
