Yamataka Miso carries on the art of miso with meticulous care, from the selection of raw materials to high-altitude fermentation. Located near the Yatsugatake Mountains, the company upholds Japanese tradition with rigor and passion. Rice and soybeans, selected with the utmost care, are prepared with precision and then transformed into miso enriched with yeast and lactobacilli. Slow fermentation, carried out at an altitude of 1,000 meters, produces miso with a subtle fragrance and a well-balanced aromatic richness.
