These Soba noodles are made up only of buckwheat flour, also known as Sobako in Japanese. The buckwheat flour used to make these Soba noodles is cultivated locally in the Togakushi mountains, where it is carefully selected for its superior quality.

The Soba noodles of Shinshu Togakushi have a firm and slightly crunchy texture, with a rich and delicious buckwheat flavor. This variety of Soba noodles is particularly appreciated by Soba's connoisseurs for its superior texture and taste, obtained thanks to a traditional production technique.

For 1 person: dive 90g of Soba in 1l of boiling water. Cook 4min, stirring gently. Turn off the heat, cover and let stand for 2 minutes. Drain and rinse them with cold water. Enjoy cold, "zaru" way, with tsuyu or hot sauce in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, nori alga in strips, .. .). Adapt the cooking time and firmness of noodles to your liking. Beware of the risks of overflow during cooking.
