This variety of kombu is cultivated by Tanaka Bussan in the clear, cold waters of the Hokkaido Sea in northern Japan. It is then cut into thin strips and sun-dried before being lightly salted to obtain shio kombu. This product comes in the form of dried, salted strips, perfect for adding flavor to your dishes. It can be used in a wide range of preparations, including soups, salads, stews and marinades. It adds an intense umami flavor and a slightly crunchy texture.
