Koshihikari rice is an exceptional rice recognized for its brilliant appearance and its umami taste which does not deteriorate to cooking, which makes it the ideal choice to accompany a light dish made from tsukemono or raw fish. Nicknamed the "King of Rice".

It is cultivated in the Toyama prefecture by Nanohana, a company specializing in rice production. Black rice is also cultivated, and this prefecture is renowned for the quality of its rice. The plains of the region are irrigated by the melting of the snow of Mont Hida, also called the "North Alps". Thanks to its fertile and nutrient lands, the region is particularly favorable to the cultivation of rice, representing more than half of the national rice production.
