Tamari Kioke Intense Minobi soy sauce - Tamariya - 100ml

Minded for two years in wooden barrels, its taste is intensely Umami with a touch of acidity, which brings it closer to miso than soy sauce. This is due to its manufacturing process which changes traditional soy sauce greatly. While classic soy sauces are made with the same soy and wheat ratio, it contains 4 times more soy than wheat. In order to make its taste more intense, the amount of water added is also reduced: from 120% of the volume of water cereals on a classic soy sauce at 50% of the volume on it. The aromas are thus concentrated, which gives it this intense taste.
