From Saracens noodles to crunchy and intense taste made. They are prepared according to a peasant technique which consists in roughly grinding buckwheat bays. The flour is then mixed with water from the melting snow from the Aizu mountains. These manufacturing characteristics give these noodles a rich taste that distinguishes them from other noodles. Then they are mastized which has the effect of making the noodles more tender once cooked. Soba can be consumed hot, in a Kake-Soba or Cold Zaru-style broth accompanied by a Men-Tsuyu sauce, Tsukemono and raw vegetables.
