The Tororo Soba is a specialty of the Shinshu region, which consists of Soba noodles and Japanese yam paste, accompanied by a sauce made from dashi, soy sauce and Mirin. This combination of flavors and textures creates a unique and delicious dish.

They have an intense buckwheat taste and a firm and slightly elastic texture.

They can be served hot or cold with a tsuyu sauce or a soy sauce. Tororo's garnish can be added to bring flavor and texture. The Soba noodles of Shinshu Togakushi Soba are prepared according to a traditional method which preserves their unique texture and flavor.

For 1 person: dive 110g of Soba in 1l boiling water. Cook 4min, stirring gently. Drain and rinse them with cold water. Enjoy cold, "zaru" way, with tsuyu or hot sauce in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, nori alga in strips, .. .). Adapt the cooking time and firmness of noodles to your liking. Beware of the risks of overflow during cooking.
