The Soba noodles of Shinshu Togakushi are a specialty of the Nagano region in Japan. These Soba noodles are made from high quality buckwheat flour, which is mixed with pure water from the Togakushi mountains to create a firm, slightly crunchy and a delicious taste. Soba noodles are often accompanied by a tsuyu sauce, a dashi broth (fish broth) with soy sauce and mirin. Tsuyu sauce is paid on cooked soba noodles, accompanied by various ingredients such as chopped green onions, norma leaves (dried algae) and vegetable or shrimp tempuras. The Soba noodles of Shinshu Togakushi are rich in flavors and have a pleasant texture. Our tips

For 1 person: dive 100g of soba in 1l of boiling water. Cook 5min30, stirring gently. Drain and rinse them with cold water.
