The Soba noodles of Shinshu Togakushi are a specialty of the Nagano region in Japan. These Soba noodles are made from high quality buckwheat flour, which is mixed with pure water from the Togakushi mountains to create a firm, slightly crunchy and a delicious taste.

Soba noodles are often accompanied by a tsuyu sauce, a dashi broth (fish broth) with soy sauce and mirin. Tsuyu sauce is paid on cooked soba noodles, accompanied by various ingredients such as chopped green onions, norma leaves (dried algae) and vegetable or shrimp tempuras.

The Soba noodles of Shinshu Togakushi are rich in flavors and have a pleasant texture. It is a healthy and nutritious dish that is perfect for all occasions, whether for a quick lunch or for a light dinner.

For 1 person: dive 100g of soba in 1l of boiling water. Cook 5min30, stirring gently. Drain and rinse them with cold water. Enjoy cold, "zaru" way, with tsuyu or hot sauce in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, nori alga in strips, .. .). Adapt the cooking time and firmness of noodles to your liking. Beware of the risks of overflow during cooking.
