High quality sticky rice of the Shin Taisho Mochi variety, nicknamed by the Japanese "the king of sticky rice", or even "ghost rice" because of his great rarity outside the prefecture of Toyama where he is almost not distributed. It is characterized by a sticky and soft texture that does not disintegrate during cooking, which makes it ideal for the preparation of pastries, confectionery, or to prepare Sekihan, a dish made from rice and red bean. It is harvested in the Toyama prefecture by Nanohana, a company specializing in rice production. Black rice is cultivated in the prefecture of Toyama which is renowned for the quality of its rice. The plains are irrigated by the melting of the snow of Mount Hida, also called "Northern Alps". With its fertile and nutrient lands, the region is conducive to rice cultivation.
