To prepare gomadofu (a sesame tofu), mix in a 400ml saucepan of water, 50g of this starch, 50g of sesame puree (white or black) and 1 pinch of salt. Heat over medium heat, stirring continuously with a spatula. When the texture is very thick (you can see the bottom of the pan), keep mixing 5min over low heat. Then pour into a damp container and let cool. Film and put in the refrigerator. Enjoy with the accompaniments of your choice, soy sauce, wasabi, etc., for the salty version, or sweet sauce, Kuromitsu black sugar syrup, maple syrup, etc., for the sweet version.
