Flat wheat noodles with tender texture, ideal for hot and cold dishes. They are made with Kinuakari wheat harvested in the prefecture of Aichi. The wheat is slowly and carefully ground according to a technique transmitted from generation to generation in order to preserve its unique taste which retorts in these noodles.
Kishimen is a type of UDON noodle from Aichi prefecture characterized by its flat shape. We traditionally consume them in a broth or with a Japanese curry.
