The miso is made without additives, using locally grown rice and soybeans certified under the JAS label in the city of Tomioka, Gunma Prefecture, and Himalayan salt. It is then fermented for over two years and dried at low temperatures to reduce it to a powder without using freeze-drying, which helps preserve its flavor and properties. More intense and richer in umami than its classic version, this powder can be used in a wide variety of dishes to add umami. Whether in salads, poke bowls, noodles, pizzas, grilled meats, or on fries, this powder adapts to all cuisines and uses.
