Miso is made without additives, from rice and soybeans cultivated locally under the Jas label in the city of Tomioka, in the prefecture of Gunma and Himalaya salt. It is then fermented for more than 2 years then dry to low temperature in order to reduce it to powder without having used lyophilization, which allows to keep its taste and its properties.

A family business founded in 2000 by a sommelier in Miso and specializing in products based on miso of rice and soy. The manufacturing process is entirely artisanal, from the cultivation of soybeans to its transformation into miso which is done by natural fermentation over a period of 5 to 8 years.
