This white miso is made according to a traditional method in a brewery located at the foot of Mont Yatsugatake, in the prefecture of Nagano. Its low salt content and its creamy texture make it a versatile miso, easy to incorporate into preparations. Its taste that is both soft, rich and slightly sweet highlights the simplest foods: whether it is fish or vegetables steamed, soups or sauces and marinades.
