Udon noodles with a fine and slightly elastic texture accompanied by a sauce of which all the ingredients are of vegetable origin, including the dashi, which is made from a broth of shiitake mushrooms and vegetables, with soy sauce .

Udon noodles are generally served in a bowl, accompanied by sauce, green onions, kamaboko (steamed fish paste) and wasabi. It is also possible to add vegetables, eggs and chicken to enrich the dish.

For 1 person: dive 100g of udon in 1l of boiling water. Cook for 3 minutes, stirring gently. Drain and rinse them with cold water. Enjoy cold, "zaru" way, with 1 sachet of tsuyu sauce (diluted in water) or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, Nori alga in strips, ...). Adapt the cooking time and firmness of noodles to your liking.

Inaniwa Udon - Akita

Inaniwa Udon from Akita. They are characterized by being thinner and smoother than ordinary Udon noodles. I think Inniwa Udon is an easy -to -eat udon type even for people who don't like Udon.
