Wheat noodles with a firm texture ideal for branches. They are made with Kinuakari wheat harvested in the prefecture of Aichi. The wheat is slowly and carefully ground according to a technique transmitted from generation to generation in order to preserve its unique taste which is found in these noodles. The addition of an alkaline solution to the preparation makes the noodles firmer and gives noodles their characteristic yellow color. The firm texture of these noodles makes it possible to prepare them both in a broth, a ramen way, and to jump yakisoba way.
