Made from soybean seeds and local Koshihikari rice in Yatsugatake, near the prefecture of Nagano, this kôji of rice (whose content is 10%) brings to this miso a soft, round and delicate taste, less salty than The other white miso. Very versatile, this miso can be used in countless preparations: sushi, onigiri, donburi, sautéed in vegetables, miso soup, dishes in sauce, vegetable and raw fish or steamed. You can also mix it with white cheese for a simple and delicious aperitif.

Add 1 cc of white miso to your polenta to add more softness and flavor. --- Mix 2 tbsp of this miso, 2 tbsp grated celery, 2 tbsp oil, 2 tbsp lemon juice and 1 tsp of honey, you will get a good sauce to accompany vegetables, cold or toasted.
