Collection: Saké Dassai

Founded by the Maison Asahi Shuzo, located in the Prefecture of Yamaguchi, Dassai is responsible for redefining the standards of the Japanese sake. The brand takes its name from "Dassai" (獺 祭 祭), a literary reference to a poet of the Heian period, and symbolizes the constant research of creativity and excellence. Dassai's philosophy is based on the idea that sake is not only a drink, but a work of art which must be perfected with passion and precision.

Dassai is famous for its meticulous production methods that combine traditional know-how and modern technologies. The process begins with a rigorous selection of Yamada Nishiki rice, considered the best rice for the production of sake. This rice is polished to extreme degrees to obtain grains of the highest purity, often at 23%, 39%, or 50%of their original size.

Fermentation takes place slowly and at low temperature, allowing to develop delicate and complex aromas. Dassai also uses advanced filtration and pasteurization techniques to guarantee the purity and quality of each bottle.
