The brewery houses a state-of-the-art production unit capable of polishing each grain of rice down to 23% of its original weight, enabling it to produce only sake that allows the yeast aromas to express themselves to the full: daiginjo. Dassaï produces some of the finest sake in Japan, and is driven by a spirit of respect and responsibility to preserve very traditional methods.
