Dassai is brewed by Dassai Inc. (formerly Asahi Shuzo), a craft brewery nestled in the isolated mountains of Yamaguchi Prefecture, at the southern tip of Honshu. Its name, meaning “otter festival,” comes from the region’s former name, where otters once lined up their catches along the riverbank as if presenting them at a festival; haiku poet Masaoka Shiki himself drew inspiration from this for his pen name. The brewery made a radical choice: to produce only junmai daiginjo, exclusively from Yamada Nishiki, Japan’s most renowned sake rice, polished until just 23% of the grain remains. This extreme level of polishing, combined with low-temperature fermentation, allows the delicate aromas produced by the yeast to fully express themselves - the hallmark of the ginjo style. For Dassai, the world of sake must evolve to survive: the brewery has fundamentally overhauled its methods, combining artisanal techniques, cutting-edge equipment, and pure mountain water from Yamaguchi to brew year-round, guided by a single criterion: quality over quantity. The result: pure, silky sakes that are fruity, balanced, and exceptionally refined, to be enjoyed on their own or with fine cuisine, which they complement without ever overpowering. Today, Dassai is one of Japan’s most influential breweries and has become a global benchmark for premium sake.
