This Junmai Daiginjo Dassai 23 is made from 23%-polished Yamada-Nishiki rice, retaining only the heart of the grain, the part richest in starch. This exceptional polish is achieved after seven days and nights of continuous polishing, aimed at creating a sake of unrivalled purity. Its refined aromatic profile reveals fruity notes of apple and pear, while honeyed nuances develop on the palate, leading to a long, clean finish. Thanks to its silky texture and complexity, it is best served at room temperature (between 1 and 12 degrees). It goes perfectly with hard cheeses, fish, and fruity or chocolate desserts. Profile: Nose: superb finesse. Like a great white Sancerre from the finest Chavignol terroirs, it displays phenomenal minerality (limestone, slate). It evolves on ripe grapes, exotic fruits (pineapple, banana) and fine herbaceous notes (vine flower, hay). Crystal-clear, it embodies youth. Palate: fine, complex. Lively attack (squeezed lemon, william pear). Heady and expressive, it is particularly fruity (melon, golden apple) and spicy (nutmeg, coriander). It gradually becomes floral (iris, lily). Finish: long, fresh. Slightly medicinal (balsam), it is also balsamic (pine, cedar) and earthy (moss, mushrooms). Very mature. Retro olfaction is marked by notes of apricot and nectarine. The empty glass again refers to the Monts Damnés (Sancerre terroir) perceptible on the nose. Goes well with: Individual Dorayaki with anko and chestnut
