This Junmai Daiginjo Dassai 23 is made from Yamada-Nishiki rice polished to 23%, retaining only the heart of the grain—the part richest in starch. This exceptional polishing ratio is achieved after seven days and seven nights of continuous polishing, aiming to create a sake of unparalleled purity. Its refined aromatic profile reveals fruity notes of apple and pear, while on the palate, honeyed nuances develop, leading to a long, clean finish. Thanks to its silky texture and complexity, it is served at room temperature (between 10 and 12 degrees). It pairs perfectly with hard cheeses, fish, as well as fruity or chocolate desserts. Profile: Nose: superbly refined. Like a great white Sancerre from the finest terroirs of Chavignol, it displays phenomenal minerality (limestone, slate). It evolves with ripe grapes, exotic fruits (pineapple, banana), and delicate herbaceous notes (vine blossoms, hay). Crystal-clear, it embodies youth. Palate: delicate, complex. The attack is full of liveliness (freshly squeezed lemon, Williams pear). Intense and expressive, it is particularly fruity (melon, Golden Delicious apple) and spicy (nutmeg, coriander). It gradually becomes floral (iris, lily). Finish: long, fresh. Slightly medicinal (balsam), it is also balsamic (pine, cedar) and earthy (moss, mushrooms). It shows great maturity. The retro-olfaction is marked by notes of apricot and nectarine. The empty glass once again evokes the Monts Damnés (Sancerre terroir), perceptible on the nose.
