A unique tea is created by sprinkling matcha over genmaicha, giving this infusion a distinctive emerald color. Genmaicha and matcha are very popular choices in Japan. Genmaicha is made by blending green tea with puffed rice grains, giving it a sweet taste with nutty notes. Its origins date back to Japan’s working-class communities, where tea—rare and precious—was mixed with rice to make it last as long as possible. As for matcha, it is a green tea powder characterized by an umami and slightly sweet taste. Traditionally prepared by whisking it with water using a special whisk, matcha adds bitterness and umami to genmaicha, thus balancing its flavors.
