Ingredients

145 g powdered sugar

53 g raw almond powder
-
50 g T45 flour
-
2 tsp. matcha tea
-
½ tsp. baking powder
-
1 g salt
-
80 g butter
-
20 g honey
-
150 g egg whites (4 to 5 eggs)
Instructions
Preheat oven to 170°C.
Beat the egg whites until stiff and refrigerate.
Mix flour, sugar, baking powder, almond powder and green tea together.
Gradually add the egg whites (at room temperature) to the mixture.
Heat the butter and honey to 50°C, then add to the mixture. Leave in a cool place overnight.
Butter and flour the financier molds. Pour the batter into the molds up to ¾ full and bake at 150°C for 5 minutes. Turn off the oven and cook for a further 5 minutes.
Leave to cool, unmould and enjoy your matcha financiers!
Recipe notes
Be careful when choosing matcha, as many are artificially colored. Matcha is an expensive product, as its production is complex and costly, but you only need a small quantity. So take a small box.
You can replace the almond powder with hazelnut powder.
