Originally, izakaya were simply sake stores where customers could consume their drink on the premises. Over time, they began to offer snacks too. These simple, flavorful dishes are the perfect way to liven up evenings with friends. In this book, chef Tim Anderson presents 80 tasty and surprising recipes inspired by this authentic bistro cuisine: fresh, invigorating dishes (such as radish salad with watercress, pickled tomatoes, tsuyu and ginger); hearty, comforting dishes (such as steak au poivre, garlic butter sauce and soy sauce); fusion recipes (fondue waf , or Korean-style beef tartare). Bonus: a guide to the best Japanese spirits and easy-to-make cocktails to accompany any dish.
