Based in Tatsuno, in Hyogo prefecture, Harima Seimen was founded in 1994, and is heir to a tradition dating back to 1881 with the production of flour and artisanal noodles. As a member of Hyogo's Tenobe Somen cooperative, it manufactures and distributes the famous "Ibonoito" (famous Vendor de somen).
Its expertise is based on unique techniques, including the "Yugone" method, which produces salt-free noodles, as well as a wide range of freeze-dried noodles and soups. The company takes pride in supplying safe, high-quality products that respect local traditions.
For 1 person: immerse 75g of udon in 1L of boiling water. Cook for 7 minutes, stirring gently. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adjust the cooking time and firmness of the noodles to your taste.
