Ingredients

  • 250 g mascarpone
  • 3 egg yolks
  • 100 g cane sugar
  • 200 ml liquid cream
  • 200 g spoon cookies / boudoirs
  • 1 heaping tablespoon matcha powder (plus a little for decoration)
  • 1 tablespoon liqueur of your choice (Amaretto or Japanese green tea liqueur, optional)
  • 200 ml of soft hot water (for mixing with matcha)
  • 1 tablespoon flour
  • ½ teaspoon vanilla extract

Directions

  1. In a bowl, mix 200 ml hot water with 1 heaped tablespoon matcha and 1 tablespoon sugar.
  2. Add liqueur if desired and mix well. Set aside.
  3. In a bowl, whisk the yolks with 100g sugar until the mixture whitens.
  4. Add the mascarpone and mix until smooth.
  5. Add the liquid cream, then gently fold it in while continuing to whisk.
  6. Quickly dip the ladyfingers into the matcha mixture (be careful not to soak them).
  7. Arrange a first layer of cookies at the bottom of a dish or verrines.
  8. Cover the cookies with a generous layer of cream.
  9. Repeat the operation to obtain 2 or 3 layers, depending on the size of the dish.
  10. Smooth the top and sprinkle lightly with matcha powder for decoration.
  11. Chill the tiramisu for at least 4 hours, ideally overnight, to allow the flavours to develop.
