It's an important ingredient in Japanese cuisine. The flakes are made from dried and fermented bonito, which is then sliced into thin strips for easy use in cooking. Our tips

After pulling your dashi and draining your bonito shavings, make an omelette with the katsuobushi and chives
Mix 4CS of mayonnaise with 2g of katsuobushi, brown your toast, spread on, then sprinkle with katsuobushi and spring onion.

Bring 500ml of water to the boil in a saucepan, then turn down the heat. Add 25g katsuobushi and simmer for 1min. Switch off and leave to rest for 10min. All that's left is to strain your dashi broth and you're ready to go.
