Take 10% of the volume of your food (fish, meat, vegetables) in shiokôji, apply it to the surface and marinate for 30min to 1h before cooking.
Keep away from light and heat. After opening: Store in a cool place, tightly closed. Consume quickly.

I thought I could make fermentation jars, but I understand that they have to be kept in a cool place, unlike lactic fermentation.
